Why Tap Water Tastes Metallic

An unusual taste in tap water does not necessarily signal a quality problem. Whether the water from your tap tastes faintly metallic, pleasantly mineral or largely neutral depends on three interrelated factors: its source, how it is treated at the waterworks, and the condition of the pipes through which it travels to your glass.
The role of source and treatment
Groundwater typically contains higher concentrations of dissolved magnesium and calcium ions than surface water, according to Germany's Federal Environment Agency (UBA), and those minerals directly shape flavour. Treatment processes add a further variable: chlorination, used in Germany only when necessary — for example, following contamination — can leave a recognisable taste, though it is not applied as a matter of routine.
Hard or soft: why water hardness matters
Water hardness, defined as the concentration of calcium and magnesium, is among the most significant influences on taste. Under Germany's Washing and Cleaning Products Act, water containing less than 1.5 millimoles of calcium carbonate per litre is classified as soft; between 1.5 and 2.5 millimoles as medium hard; and anything above that threshold as hard. Many people perceive harder water as fuller in flavour, and hard water is not considered a health risk — both calcium and magnesium are minerals also found in commercial mineral water. The practical drawback of hard water is limescale build-up in kettles and coffee machines. Water drawn from reservoirs tends to be softer, as it contains fewer dissolved minerals.
Old pipes and standing water
The domestic installation is an equally important factor. The UBA advises running the tap briefly before drinking or cooking if water has been standing in the pipes for more than four hours. Old galvanised iron pipes can impart a rust flavour, while newly installed plastic pipes may release trace substances that affect both taste and smell. A related consideration applies to water left standing in a glass, where similar contact-time principles are at play.
The official assessment
Despite the range of variables that can alter the sensory experience of tap water, the UBA's overall verdict is unequivocal: tap water distributed across Germany is, in its words, "faultless in every respect." The German Drinking Water Ordinance (Trinkwasserverordnung) requires that water supplied to consumers be "acceptable and free from abnormal change" in both taste and odour — a legal standard that remains in force regardless of regional variation in hardness or mineral content.
The practical implication is that a distinctive taste, while sometimes surprising, is more likely to reflect geology, local infrastructure or household plumbing than any failure of water quality.
